Slow Cooker Beef Tips with Gravy
Tender chunks of beef slowly simmered in a savory gravy until melt-in-your-mouth soft. Perfect served over mashed potatoes, rice, or egg noodles for a hearty comfort meal.
Ingredients
- 2.5 lbs beef stew meat or sirloin tips, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- 1 pack brown gravy mix (optional for extra richness)
- 2 tbsp cornstarch
- 2 tbsp cold water
Instructions
- 1
Pat the beef dry with paper towels. Season evenly with salt, pepper, garlic powder, onion powder, and paprika.
- 2
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Brown the beef in batches for about 2–3 minutes per side. Transfer the browned beef to the slow cooker.
- 3
Place the diced onion and minced garlic over the beef.
- 4
In a bowl, whisk together the beef broth, Worcestershire sauce, soy sauce, tomato paste, thyme, rosemary, and brown gravy mix if using. Pour the mixture into the slow cooker. Add the bay leaves.
- 5
Cook on LOW for 7–8 hours, or on HIGH for 4–5 hours. The beef is ready when it is fork-tender.
- 6
Mix 2 tbsp cornstarch with 2 tbsp cold water to make a slurry. Stir it into the slow cooker during the final 20–30 minutes of cooking. Allow the gravy to thicken before serving.
